CO2 Chargers

When you get your whipped cream dispenser, keep in mind that it doesn’t work on its own. You’ll also need chargers, which are small canisters full of either N2O or CO2 depending on what you want to make in the dispenser.

In general, you’ll use one charger for pint- and half-pint dispensers. You’ll typically need two chargers for quart-size dispensers.

These required chargers typically do not ship along with the dispenser, so you’ll need to buy them separately. Make sure you order them at the same time as your dispenser, so you’re not stuck with a device that you can’t use!

For whipped cream and similar uses (such as mousses and foams), as well as nitro coffee*, you’ll need N2O chargers.

For soda and other carbonated liquids, you’ll need CO2 chargers.

If you can, we recommend getting both N2O and CO2 chargers so that you’ll have more flexibility in what you make. 

*Be aware that nitro coffee is traditionally made with N2 (nitrogen), not N2O (nitrous oxide). However, you can get a decent version using N2O chargers. You should not use N2 chargers in a canister that isn’t designed for them. The Different Types of Dispenser

In a lot of ways, all whipped cream dispensers are pretty similar. Cold Only or Hot and Cold

Typical Dispenser vs. Nitro Dispenser

If debating the difference between N2O and N2 in making nitro coffee sounds like something with zero relevance to your life, feel free to skip this section! But if you’re a true coffee connoisseur who wants the option of making nitro coffee at home, read on.

All of the dispensers on our list are capable of making a variation on nitro coffee. Using an N2O charger (the same kind you would use for whipped cream), you infuse your cold-brewed coffee with nitrous oxide. This improves the flavor and gives the coffee a distinctive texture. 

This technique using N2O chargers is a decent—but not exact—replication of nitro coffee at home. The big difference is that true nitro coffee is made with nitrogen (N2), not nitrous oxide (N2O). And, unfortunately, you definitely should not use N2 chargers in a standard whipped cream dispenser that isn’t designed for use with nitrogen (N2). 

Nitrogen creates more pressure than nitrous oxide, which could be dangerous in a device not made to withstand that level of pressure.

This leaves you with basically two options. You can either:

  • Make a decent (but not exact) version of nitro coffee using N2O (nitrous oxide) chargers in your standard whipped cream dispenser, OR

Aluminum vs. Stainless Steel

Whipped cream dispensers typically come in one of two materials: aluminum or stainless steel. (Some parts, especially decorating tips, may be plastic—but the body itself is almost always either aluminum or stainless.)

We had planned to write a pros and cons list about each material, but the simple fact is that aluminum has only one pro: it’s typically less expensive. 

Stainless steel wins in every other category. It’s more dishwasher-friendly, less prone to oxidation, and works better with acidic ingredients (which can be important depending on what you tend to make).

The only reason we would recommend an aluminum dispenser over a stainless steel one is if you’re on a budget. Just be aware that you’ll most likely need to hand-wash your aluminum dispenser, and that it may not be ideal for use with acidic liquids.

Size
